Gula Melaka Oats Cookies

Do you know that oats are a great source of soluble fibre? Oats can fill up your stomach faster than other grains and so you will remain full longer! The great thing about this recipe is that you can also swap the oats for quinoa to make them suitable for gluten free diets.  You can add chopped almonds or raisins to it. Instead of palm sugar, you can add honey too. A dash of vanilla essence can be added if you like vanilla flavoured cookies.

 Preparation time: 15 minutes

Makes: 15 pieces

 130 g rolled oats

140 g plain flour

100 g grated palm sugar (Gula Melaka)

60 g desiccated coconut

50 g golden syrup

125 g unsalted butter

¼ teaspoon salt

1 teaspoon bicarbonate of soda

2 tablespoons hot water

METHOD

  1. Preheat oven to 180ºC.
  2. In a large bowl, mix oats, flour, palm sugar and coconut.
  3. Melt golden syrup and butter over low heat.
  4. Mix bicarbonate of soda in very hot water and immediately add to ghee mixture.
  5. Give a quick stir (it will become frothy) and pour ghee mixture into the dry ingredients. Mix well.
  6. Spoon tablespoons of the mixture onto baking trays lined with non-stick baking paper and flatten very slightly.
  7. Bake for 20-25 minutes or until a deep golden brown.
  8. Cool on baking trays for 5 minutes, then transfer to wire racks to cool completely before storing in airtight containers.
