Potato and Onion Pizza

When I have only a few basic ingredients in the refrigerator and kitchen cupboard on a Monday, Potato and Onion Pizza becomes my dinner.  Truly, when I described what I was going to do for my dinner, a friend, chuckled and commented “it is all heavy in carbohydrates!”  Of course, I knew that.  But just imagine the caramelized onion, the smell of the rosemary, the potatoes and cheese combined together……….hmmm ….So, just in case, you are tempted too, here is the recipe:

𝗣𝗢𝗧𝗔𝗧𝗢 𝗔𝗡𝗗 𝗢𝗡𝗜𝗢𝗡 𝗣𝗜𝗭𝗭𝗔

TO MAKE THE PIZZA BASE

300 g bread flour

5 g instant yeast

5 g salt

5 g sugar

15 ml olive oil

180 g water + –

FOR THE TOPPING

800 g Russet potatoes

300 g red onion, peeled and sliced thinly

1 teaspoon freshly ground black pepper

2 sprigs fresh rosemary leaves or 1 teaspoon dried rosemary leaves

50 ml extra virgin olive oil

300 g grated mozzarella cheese or Gruyère cheese

100 g grated Parmesan cheese

Sea salt

METHOD

  1. TO MAKE THE PIZZA BASE, mix the flour, yeast, salt, sugar and olive oil together in a large mixing bowl Gradually add the water, mixing well to form a soft dough.  Add about 1-2 tablespoons of water if dough is too dry.
  2. Turn the dough out on to a floured work surface and knead for about 5 minutes, until smooth and elastic. Transfer to a clean bowl, cover with a damp tea towel and leave to rise for about 1½ hours or until doubled in size.
  3. TO MAKE THE TOPPING, scrub and wash the potatoes thoroughly.  Cut into very thin slices.  Place the potato slices in a bowl of water with salt.  You can prepare the potatoes slices well in advance and keep them refrigerated if you want.
  4. Preheat oven to 220°C or 250°C.
  5. Punch down the risen dough, divide it into two and roll out each piece into a circle or rectangle about 5mm.  Or roll out into one large pizza with the entire dough.
  6. Drain the potatoes and pat dry with a clean tea towel. Place into a bowl.  Add in the onion slices, pepper, rosemary leaves and olive oil.
  7. Spread the above evenly on the rolled pizza dough.
  8. Sprinkle with the cheese.  Sprinkle with sea salt if desired.
  9. Bake the pizza for about 25 to 30 minutes or until the crust is golden brown.
  10. Preferably serve hot.
