Lemon Grass and Ginger Syrup

This syrup is so versatile!  You can sweeten your tea with it; make a lemonade out of it by just squeezing some lemon juice into you glass and adding a bit of the syrup and soda water; add it to your cocktail drinks; serve it as a hot sweet drink; make a milky bubble tea;  add a couple of tablespoons to a stir fried meat dish or a marinade or pour over a warm just out of the oven butter cake!  There is more that you can do with this…….. 1000 ml water

1000 g raw sugar

300 g lemon grass

200 g old ginger, washed and smashed lightly or sliced

1 green chilli padi, crushed lightly

10 g kaffir lime leaves

METHOD

Combine water and sugar in a pot and bring to boil till the sugar dissolves.

Add in the rest of the ingredients and let the syrup simmer for about 80 minutes, covered.

Let it cool thoroughly before straining it with a clean and dry strainer.

Preferably keep refrigerated.
