Kolkata Egg Rolls
If you have been to Kolkata, you will know that these egg rolls are sold practically at every street corner. It is a kind of fast food, very filling and sold in many varieties. Though I am sharing a vegetarian version, the sky is the limit to add any filling of your choice. Home-made Kolkata Egg Rolls are very healthy.
Frozen chapatis – can buy the frozen chapati or wholemeal tortillas from supermarkets
5 eggs
2 tablespoons milk
1 teaspoon garam masala
Chopped coriander leaves
Salt
Freshly ground black pepper
ghee or butter
1 cucumber, seeded and cut into thin strips
20 g green chillies, finely chopped
1 large red onion, sliced into rings
50 ml lime juice mixed with bottled chilli sauce
METHOD
- Fry the chapatis lightly according to instructions on the packet and keep aside.
- Place eggs, milk, garam masala, salt, pepper and coriander leaves together
- Heat ghee in a pan.
- Pour a ladleful of the egg mixture and tilt the pan lightly so that it forms a circle as big as the chapatti.
- Cook on low heat until the egg is partially cooked – the sides should be crisping up
- Place a chapati on it and press lightly and cook till the egg is done.
- Flip the chapatti to warm it.
- Transfer to a plate.
- Arrange cucumber strips, onion rings, green chillies and drizzle a bit of the chilli sauce.
- Roll up and serve.
