I absolutely love the heavenly smell emanated when cinnamon, sugar and apples are baked together!!
To make this cake divine, use bananas that are very ripe – the ones that have brown flecks on the peel. Bananas contain tryptophan, an amino acid that helps your body produce serotonin, a natural substance that has a calming effect on the brain and can act as a gentle sedative. I used dark jaggery and used a fine grater to grate it. Go on try baking this cake.
The caramelized brown sugar pineapple, and the way the pineapple juice seeps down into the cake makes the cake so luscious and I never got tired of baking it again and again!
I love using fresh fruits in my baking. I choose the fruits for the gorgeous colours first and then I will consider their fruity flavours. Therefore fruits like raspberries, blueberries, mangoes, pink dragon fruit are my all time favourites to incorporate in my baking sessions.
The cupcake itself is unique in flavour too. Instead of using the usual vanilla essence, the pandan leaves have been blended in the milk to give a natural aroma. If you cannot find fresh pandan leaves, you can use 1 teaspoon of pandan paste instead.

Tea breads are very easy to make. You don’t need to use yeast and there is no fermentation involved. This tea bread is rich and would taste better the following day.
cherries, you can also use other chopped dried fruits like apricots, peaches, pineapple, raisins and currants. You can also add in some toasted nuts like almonds or cashew nuts. Rocky Road also make an excellent gift to take to a potluck party!
